Maple Mustard Pork Chops

I have not posted in awhile as I have been busy. I have still been cooking on the egg but nothing really eggciting. Tonight however I made Maple Mustard Pork Chops with some Maple Mustard BBQ sauce on the side. They were very good and I highly recommend them. The below recipe was take from Steven Raichlen’s BBQ-USA.[p]Maple Mustard Pork Chops:[p]4 Pork Chops
Kosher Salt and Fresh ground pepper to taste
3 tbsp dry mustard
3 tbsp soy sauce
½ cup Maple syrup
3 tbsp vegetable oil[p]Place Pork chops in baking dish and sprinkle both sides with salt, pepper and the dry mustard and rub it in. Drizzle soy sauce over both sides of the pork chops patting it onto the mustard. Place the maple syrup and vegetable in a small bowl and stir with a fork until mixed. Pout the mixture onto the pork chops covering both sides and let marinade in refrigerator covered for 30 minutes. Cook the pork chops direct about 400* until done turning once.[p]Maple Mustard BBQ Sauce:[p]1 tbsp butter
2 slices of bacon cut into ¼ in. slivers
1 small onion finely chopped
1 clove garlic minced
1 tbsp tomato paste
¾ cup Maple syrup
6 tbsp Dijon mustard
2 tbsp cider vinegar
Kosher salt and pepper to taste[p]Melt butter in saucepan add bacon, onions, and garlic until golden brown. Stir in the tbls of tomato paste for 1 minute. Stir in maple syrup, cider vinegar and mustard and let sauce simmer until thick, about 10 minutes. Add salt and pepper to taste. Let cool to room temperature and serve with the pork chops.
