Pounds for a party?

Unknown
edited November -0001 in EggHead Forum
I'm having some family and friends over next weekend and I need to serve about 15 to 20 people. How many pounds of pulled pork do you think I will need to put on the Egg? Does any know how to calculate servings with pulled pork?

  • Hudsonjm,
Here is my rough estimate .. I used 1/2 cup servings to figure this out. And I figure that people will be eating sides as well. I also figure on 2 sammiches per guy and 1.5 per girl. Mixed company = 1.9[p]Precooking weight x 2.7 = servings per butt after cooking.
I use 3.0 if the company is mixed.[p]
    Therefore ... 20 people ... mixed company
    (20 servings x 1.9) / 3 = 12.6 lbs of butt[p]Its not a fixed calc ... I round up for big guy parties.[p]I have a catering event next Wed for 55 big vehicle lift installers ...55 x 2.2 / 2.7 = 44.8 lbs of butt ... That will be 6 7.5# butts on my 2 eggs. I think I better call my meat man today.[p]Later.
    Hope this helps..

    Hudsonjm,
Depending on how hearty their appetites are, and how much other "stuff" there is, figure between 1/3 and 1/2 pound per person. Then, figure that the purchased weight will reduce by approximately half during cooking and "trimming".[p]One pound of pulled pork will feed three people, and would start out as two pounds of meat.[p]21 people will need about 7 pounds of pulled pork, which would start out as 14 pounds of meat.[p]HTH

Smoked Signals,[p]I assume those are post cook weights?
  • Mark Backer,
Nope .. precook ... easier to deal with at the store. No calculation involved in the asile.[p]The big thing to consider is the 1/2 cup serving .. that is a decent sandwich but not a huge sandwich. Thus the rounding up for big guys and down for all girls.[p]
