fried eggplant pie

Took the day off & had a few buddies over to celebrate Friday, the weather, the season, whatever. One of my favorite veggies growing up was eggplant, cooked any way but particularly sliced, breadcrumbed, fried & salted. My mom would make piles of these things as me & my brother & dad would eat them before they’d hit the dinner table. Few things in this life are tastier

I thought they’d make a great pizza topping:

    Love eggplant pizza one of my favorites, had it the first time in upstate N.Y. while I was attending Culinary School, and still make it on a regularly.

    I always thought that it could'nt get better than fried eggplant.I now stand corrected.Absolutely beautiful. :)

    thanks, though it was a bit overdone, was too busy slurping on a beer & talking & it got a little away from me. Probably no more than 1 minute over but at 700+ degrees there's not much room for error :laugh: .

    Eggplant is relatively common as a pizza topping around here, usually sliced almost paper thin & put right on the pie & often accompanied by blobs of ricotta (also usually a white pie).

    The fried-ness of my version is homage to mom
