Couscous recipe

Maybe not BGE related, but cooking nonetheless. I've been trying to find a good couscous recipe and decided this would be a good place to get some info. So if you have a good recipe with some fresh veggies lay it on me eggers!

I like to cook the couscous per the package in beef or chicken stock depending on main dish. Like to roast zuccini, yellow squash and onions and then place on top of couscous for main dish with lamb or chicken.
Here is a chicken dish I recently did.
