Mexican Themed Appetizer

We're watching the race in Mexico tomorrow and thought that we'd have some Mexican themed food. We've nailed down the entree but are looking at making some appetizers that can be done on the egg and are Mexican themed. Any suggestions?[p]p.s. thanks to everyone for their great response about the garlic thing.

    I just made this last week...[p]I grilled some pork tenderloin using a lump or 2 of mesquite. It was rubbed with Dizzy Dust. (www.dizzypigbbq.com)[p]I bought some fresh 7-layer dip and flour tortillas at the grocery store.[p]Then heated the tortillas in a pan, spread some 7-layer dip, added the smokey flavored pork.[p]Pretty incredible.[p]You could make several of these and cut them in half to serve as appetizers...

    Here is a link to an ABT recipe page. These directions are for the upright method. If you go this way, take a disposable aluminum pan with 2" sides, turn it over and fashion holes in the bottom to hold the peppers upright. [p]The other method is to slice the peppers lengthwise, use the same cream sheese (or other fillings) and wrap completely with thin bacon, secure with a toothpick if you like.[p]~thirdeye~

    <p />JennQ,[p]Quesadillas are always good. You can do many variations. Tonight I made them with a combo of jack and cheddar cheese, tomatos, pickeled jalapenos, black olives, green onions, cilantro and grilled chicken. You can do lots of small ones or do big ones and cut them up. The egg does a great job with them.[p]Chuck [p][p]

    Hey Chuck,[p]Do you always do them open face? I fold the tortilla over
    an then flip once on the egg. My favorite have got to be crab (or shrimp) ones.[p]~thirdeye~

    <p />thirdeye,[p]I do them open face and then fold before taking them off. The top melts well and the tortilla gets nice and crispy. I have done crab and shrimp ones as well and I agree they are really good. Pulled pork works well too.[p]Chuck
