Pizza Dough

In a few weeks, I am planning on making several pizzas on th egg. I want to make dough up in advance.[p]How long will dough keep in the fridge? Can it be frozen? If freezing, should it be hand tossed to shape first?[p]I appreciate all your input. I don't have a dough mixer, but may borrow a friends to make the batches go quicker (I normally make the dough and knead by hand)[p]Banker John

    Banker John,[p]Alton Brown of "Good Eats" on Food Network stores his pizza dough balls in the fridge for up to six days in a ziplock bag sprayed with Pam. In my opinion, his process is way over-complicated. I think the key is to let the dough rise, then knead it a second time, and finally shape it into a ball before refrigerating for up to six days.[p]Check out the link for Alton Brown's complete method.

    Banker John,[p]You can place dough balls in the refrigerator after the 1st rise. I just use a food storage bag with a twist tie. Spray the inside of the bag with Pam, and tie the bag close to the opening to give the dough room to rise while in the frig.[p]My preference is the dough can stay in the frig for up to 3 days. When you're ready to bake, pull the dough ball out of the frig and let rest for about 1 hour. Then you can shape the dough, place the toppings on the pie and then off to the Egg.[p]You can freeze dough for up to 2 weeks, but I recommend the frig route. Just my preference.[p]How many pies are you planning to bake?[p]Puj
