Since your responsible for my new food passion (Risotto) - what be your favorite one pot meal with it? anyone...[p]Chet

    Our favorite...[p]Risotto with Squash and Bacon[p]6 c. chicken broth
    2 Tbs olive oil
    2 c. butternut squash, 1/2-inch pieces
    2 c. arborio rice
    2 Tbs parmesan, grated
    1 c. dry white wine
    3 oz bacon or pancetta, coarsely chopped
    1/2 c. onion, finely chopped
    2 Tbs butter, room temperature[p]Bring broth and wine to simmer in medium saucepan. Reduce heat, keep hot. Heat oil in heavy large saucepan over medium heat. Add bacon and saute until cooked. Add squash and onion, stir to coat. Add rice and saute a couple minutes. Add 2 cups hot broth mixture. Adjust heat so that liquid bubbles gently. Stir until liquid is absorbed. Continue adding hot broth 1 cup at a time until rice is just tender, simmering until liquid is absorbed before each addition and stirring often, about 20 minutes. Mix butter and 2 tablespoons parmesan into risotto. Season to taste with salt and pepper.

    chet, we usually eat it the traditional way as a side. . .but i have added things like porcini mushrooms and grilled chicken which makes it a great meal. ..[p]if you want something heartier, try using beef broth instead of chicken broth. .. you get a very different but excellent tasting rissoto that way as well. ..again, add porcini mushrooms and maybe some prociutto or pancetta for a main course. .. .[p]yummy . ..

    Make a standard risotto and just prior to service add in shrimp that you've sauteed in a separate pan including any pan juices. We like our shrimp a little spicy. Make sure you add the shrimp at the last minute or they'll get overcooked.

    A nice tasty treat is to use bone marrow for the olive oil. It makes a truly great rissotto.
