Another Use for Pulled Pork

We stumbled across this recipe in Southern Living. It sounded good and we decided to try it. It was as good as expected and suprisingly easy to make. With all of the pork cooked by people here, I thought the recipe could dome in handy.
BEE[p]Pork and Black Bean Soup[p]¼ cup Sour Cream
2 Tbs Chopped Fresh Cilantro
1 small Onion, chopped
2 Tbs Olive Oil
2 Garlic Cloves, minced
3 cups Chicken Broth
3 (15 oz) cans Black Beans
1 (10 oz) can Diced Tomatoes and Green Chiles
1 Tsp Ground Cumin
½ LB Shredded Barbeque Pork
2 Tbs Lime Juice
Shredded Cheddar Cheese[p]STIR together sour cream and cilantro. Cover and chill until ready to serve.[p]SAUTE onion in hot oil in a Dutch oven over medium heat 7 minutes or until tender, add garlic, add garlic, and sauté 1 minute. Stir in broth and next 3 ingredients. Bring to a boil; reduce heat, and simmer, stirring often, 15 minutes.[p]PROCESS 2 cups bean mixture in a food processor or blender until smooth. Return bean puree to Dutch oven. Stir in pork, and simmer 10 minutes. Stir in lime juice.[p]Top each serving with shredded cheese and a dollop of sour cream mixture.

    BigEasyEggor,[p]Thanks for the post - I had a 1/2# of pulled pork left over from making yesterdays ABT's and used it for your Black Bean Soup. It was great. Even my 5 year old tried it b/c it had pork from the BGE and he liked it - normally he runs from anything to do w/ beans.[p]Thanks again,

    that very recipe is what prompted me to cook my butt that I pulled yesterday. Going to the store to get the beans and fresh cilantro today for preparing Monday. Thanks for another endorsement - I anticipate it will be goooood!
