There is nothing like watching watching your beef tenderloins sear with your favorite cold beverage in hand. Char crust on the outside and pink in the middle. Life is good !!! Peace.[p]BeefTenderloinSteakSear.jpg

  • FatBack,
    Those look awesome!
I have to try those on the egg.[p]Uncle Phil

  • Uncle Phil,
the "T-Rex" steak method is probably the most popular single way of cooking anything on the egg. ...it calls for searing your steaks at very high temps (over 700 degrees), for a short time, then letting the steaks rest on plate for 20 minutes (you have no idea how important this step is) and then 'dwelling' them back in the egg at 400 degrees for a few more minutes till done. .. .this method works great with tenderloins, strips, rib eyes and thick pork chops (to name a few). ... following is the link to the entire story, as can be found on naked whiz's site. .. [p]once you've had a t-rex'd steak, you will never eat a steack in a restaurant again. ..[p]enjoy

I haven't eaten steack in ages, Max!!!!!!! Can't even remember how to make it. What's your recipe? :)
  • JSlot,
are you teasing me about my lousy typing/spelling, or do you really need a steak recipe?? LOL[p]if you really need the recipe, i rub mine with olive oil, come kosher salt, and dizzy cowlick (redeye express is also good). .. then follow trex method exactly (sear for 30 seconds per half inch of steak on each side at over 800 degrees, rest em for 20 minutes, then dwell at 400 until they hit desired internal temp). . .we prefer in this order: NY strips, tenderloins, rib eyes . .
