I want to do the spatchcock chicken this weekend. Never cooked one on the BGE. Do you cook it with direct heat or indirect heat? What dome temp? Approx cooking time?
and finally do you flip or which side do you start cooking on first? I have read it both ways. -
I did direct heat, and I did legs and thighs instead of the whole chicken. Temp was about 325-350 for probably 35 mins or so (can't remember the exact time) I put them on skin side down, for about 15 minutes and then flipped for another 10, then started saucing, and continued to turn until I got to the right temp. I really liked the spice rub and sauce on this recipe. Good luck
