Just got back from a bird preserve hunt and have a good amount of pheasnt, quail, and chukkar. I was going to cook the quail like a dove but looking to see if anyone has any ideas on the pheasant and chukkar? I have the breasts as well as the legs saved and just wondering what to do to get the best bang form my buck. Thanks in advance for the help

I've braised pheasant with wine and little white onions, coq au vin style after first browning in the DO. Lots of herbs. My friend skinned it, damm. I hope the skin is still on yours. The outside of the bird is the best part.
