Spatchcocked Game Hens
Spatchcocked Cornish Game Hens[p]Hey guys I could use a “leg up” on cooking these little birds when they have been Spatchcocked. Thanks to the Whiz, I have cooking Spatchcocked chickens down to a science. Regarding the game hens could anyone offer advice regarding times, temp or techniques? Thanks in advance.[p]Mike[p]

Mike_W, hope it's not too late for this, but I've had good success with spatchcocked Cornish hens going direct at 325 dome with skin side down for about 15 to 20 minutes or until the skin is brown - then flip for another 15 minutes or so until Thermapen says the breast is 170°.
