Elder Ward Brisket recipe clarification
Ref:[p]http://biggreenegg.com/recipes/beef/beef0277.htm[p]Just to be sure: the ingredients on the World Class Brisket list no liquid of any kind, but in the directions refers to "liquify"? Is there some amount of water/oil/other something missing? Or is this a "dry rub"? If you don't need this much rub, what's the smallest amount practical to make?[p]I also don't need 11 lbs, more like 2-3 lbs. of meat. Has anyone done this who can advise me of any adjustments to make for this? Time/temp/prep instructions?[p]thanks! We love our BGE![p]Tim[p]

Tim Landers,[p]First, I'm pretty sure he just means to use the "Liquify" setting on the blender. There is no liquid.[p]Second, looks like your piece of meat is about 1/4 of what he used. Divide by 4.[p]Third (and unasked) is your brisket is awfully small. Watch it carefully. Ya don't want to dry it out BUT you still need to go through a plateau. You may have to wrap it part way through. Also, have a spritzer onhand to spray it down. Many people use a mixture of apple cider vinegar and apple juice. The proportion is your choice. I've used 50/50.

Tim Landers,[p]This is my favorite brisket. I think he put down Liquify as one of the blender speeds. I actually do it all in a Cuisinart if I'm doing a full recipe. Just put it on a real high speed regardless of Cuisinart or blender or coffee grinder! No liquid.[p]mShark

MollyShark, the recipe doesn't mention indirect or direct heat. Which do you apply?

George,[p]Waaal, I prop it up on a big rack like a v-rack or you can do it on a raised grid. Kinda laid out like a body. I stick a baking sheet underneath it to catch the drippings and pour a bottle of whatever beer is around in the baking sheet. So not sure if it is direct or indirect! But it always comes out great. Always.[p]mShark

MollyShark and George,[p]Thanks for the explanantion. I used the rub yesterday and loved the flavor. [p]Just need to work on getting the meat a little less chewy. I may have needed to wrap it in foil sooner than I did.[p]Tim
