Low Temp Smoking Prob's

Help! I have trouble getting my chips to smoke when cooking at relatively low temp's of 190 - 250. I've tried soaked and dry, but neither seem to smoke during the entire cooking process. I've checked to make sure the chips have not all burned up, and they haven't. I've mixed sizes,etc., with no luck. Any ideas?

    If you put wood chips or chunks on burning lump it WILL smoke...you will almost definately never get smoke throughout the entire low and slow cook...chips burn up faster than chunks and the best you can do is spread them around from the center out so the longer the lump burns the more new chips/chunks it reaches in the lump pile. You will find over time you most likely wont want smoke thru the entire cook...HTH[p]Wess
