thanks to everyone for all the help/advice. The timing was slightly off (done a few hours too early) but foil, beach towels and a cooler worked wonders. The picnic came out great, the brisket was the best I've ever made (or eaten) and the ribs came out great too.[p]Not so bad for a Yankee. Now if only I hadn't had so much to drink...UGH.
