Our great friend Leah Moore is in town, and she offered up the cuisine for our Superbowl dinner. She learned this dish from her friend from Australia who lived in Thailand where she picked this up. This is a chicken satay curry with vegetables and man was it delicious. The chicken kabobs were marinated in a mixture of soy sauce, garlic, ginger, lime juice, and red pepper flakes. The homemade curry included mushrooms, snow peas, and butternut squash. She also made a delicious peanut sauce for dipping the kabobs. [p]My contribution to the meal was to cook these kabobs on the Egg, which I did for 10 minutes per side at 375 on a raised grid:[p]kabobs%20done2.JPG[p]And here's a closeup:[p]kabobs%20closeup.JPG[p]And here's a picture of the plated meal:[p]curryplate.JPG[p]And one more closeup:[p]currycloseup.JPG[p]Cheers to all and congrats to the Pats.[p]TRex
