Plateau
My 7 lb but is at 172 and on the 27th hour. )Started yesterday at 1:30 pm. The overnight went fine I ran low on fuel this am (at about 9:00 am) and it took me 1/2 hour to catch on while the guru blew cold air thru the egg. The beeper never went off. So I stuck in the wife's oven at 250 while I restoked the egg. The butt went from 170 down to 150 and now is back to 170.
Should I be concerned about bacteria?

Bruce,[p]Your butt is just fine but it should have been done 10 hours ago. Are you sure that the grid temp you are using is high enough to cook your meat? If it was me, I would raise the temp and try to get the butt done this weekend! grin[p]Dave

Thanks, it was the best ever. But the duration concerns me. I had the guru set at 212 for the overnight and it held steady. The thermopen agreed with the guru on temp so the whole duration thing puzzles me.
