Cooking B Butt and Brisket at same time-experts please help

Just bought a polder from Williams-Sonoma, going to do a lo and slo tonight with a huge brisket and butt. My therm only has one probe, which should i monitor. I also have a leave in old shool therm but I really don't want to lift the dome until i absolutely have to. Any advice???

Put the probe in the Butt. It cooks much faster than the Brisket. Sometimes 15-20 degrees faster. Did you seperate the flat from the tip? I found last week that it might help.
