Semolina Dough
1/2 Tbsp yeast
1/2 Tbsp sugar
1 1/2 Tbsp table salt
2 1/4 pints water
2 cups simolina
10 cups flour[p]Mix dry ingredients except flour in bowl, add water and mix 4 mins. add flour mix for 6 mins.
The dough should have shiny, smooth appearence.
let dough rest 10-20 mins. Shape dough into balls and refrigerate the dough for at least 12 to 16 hours at 36 to 39 degrees.
Remove from refrigerater, allow 30-45 min hours before baking. Do not allow dough to double in size rotate back to refriferater if needed.
This the reccomended dough from the folks that brings you Woodstone woodfired pizza ovens.[p]While mixing in the bowl after 2 mins if the mixture is sticking add a little flour if too dry add a little water.
