cooking with unglazed bakeware

Has anyone cooked with unglazed bakeware on the egg? I want to put the bakeware containing potatoes and green beans on the lump. The rack above will be cooking the chicken breasts and the bacon and I want the drippings to season the food below (will be cooking on the small).

I use simple unglazed terracotta flower pots to bake monkey bread, but not directly on the lump - the looks that gets from people is priceless! I did season them a couple times though with veggie oil and then bake it in. A shot of PAM makes the clean up easier.
Re-gasketing the USA one yard at a time -
I have used terra cotta flower pot "feet" in lieu of egg feet to raise my pizza stone above the platesetter so I know they're good for at least 750°. Not sure about setting them on the coals though. I suppose you could buy one of the feet (Lowe's had 'em for a buck or so) and throw it on the coals and see what happens.
I hate it when I go to the kitchen for food and all I find are ingredients!

I do a lot of breads at eggfests and only use unglazed. My setup is platesetter legs down, spacers and baking stone with baking pan on the stone. I use the temp recommended in a cookbook. Really the same as baking in an oven.

We use a ceramic/unglazed deep dish pizza pan to capture drippings on the plate setter. It works great, but gets really black and dirty. It isn't really easy to clean, but certainly keeps the Wagu Brisket juices that we cook from getting into the fire box after dripping over the plate setters edge.

Tonight’s results. Slight change in plans no green beans and bacon still frozen. Veggies became carrots, potatoes, onion, garlic and jalapeno.
Started the chicken 20 minutes before putting on the veggies on the egg. The pie plate stood proud of the coals and very tight fit. Temp dropped to 250 and could not recover. Removed the veggies after 20 minutes and installed the plate setter. Temp never got above 275 pulled veggies and popped them in the oven. Temp back up to 350 within few minutes. Temp stable at 350 for rest of cook. Pulled chicken breast at 175 and let rest. Good eats. We split a breat and saved the other for tomorrow. Will try this again on the large egg or find a smaller pie plate.
