Haven't given it much thought. Doing a 15+ pound brisket; 16+ pounds of Boston Butt; 12 pound turkey for a little Mardi Gras get together Saturday.

My brisket should be corned by then and I'll do it as a pastrami. I'm thinkin about doing some ribs because it's been awhile. THEN I'm supposed to bring soup to a party. I have a big ol ham bone in the freezer that's itchin to be made into ham and bean soup. Thought about putting it on the egg for awhile, with smoke, just to see how it would come out.

Shelby,[p]I may be in NO for a conference in May at the Fairmont Hotel. Since I'll likely be staying at the "host" hotel, I probably won't have a car, but will have to rely on taxi's for getting around. I love to get out and walk, and was also curious about the area where I'll be staying. Would love some eatery recommendations from a local, as well as good activities to get the most from the city while I'm there. Any suggestions? Man, I just marinate them the night before in some buffalo sauce. Then put them on the egg and flipping and basting them the whole time. Usually takes 20 minutes or so. There are a bunch of different sauces on the recipes forum to try out.
