Baby backs...best way to reheat?

Well, I just finished yesterdays 3-1-1 babybacks here at work. I have been offered to be given ribs to cook on the egg, bring in the next day and split for lunch...no cost to me, other than time and lump. I can see this turning into a once a week ribfest here.[p]What is the best way to cook the ribs one day then reheat the next day? I want to preserve that oh so tender meat that comes directly out of the egg as best as I can.

  • egghead2004,[p]I vac seal mine while still warm. I usually warm back up on egg but I think foil in the oven would work.[p]CWM

    I just did 15 full racks of BB's last weekend for a tennis outing. Cooked them Friday - smoked them for 4 hours indirect at 200 grill temp, put them (all) in a pan and covered with foil. They got to room temp while I went out for dinner. Came back and charred them direct at 400 at 8 minuted per side. Wrapped them individually in foil, let them sit out at room temp for an hour and into the fridge for the night. Out of the fridge in the AM for about an hour to get to room temp. Next put them (still in the foil into an oven at 170* for about an hour (until heated completely through). Cut them in three rib pieces and served with slaw, beans & jalepeno corn bread with a little Johnny Harris BBQ Sauce on the side. Thank God I saved a half of a rack for myself - not a one left in the serving tray. Joe
