Can Tri-Tip be smoked low and slow and still be tasty and tender? Can this application be applied to a commercial process? Any suggestions would be appreciated.

FlatEric, I always do mine lo and slo, set at 225 and indirect with platesetter. Take it to 125 and rest for about 20 minutes, then sear to a nice liking. rest about 5 and a great teander piece of meat.

FlatEric,
Thanks to all for the info. Tri-Tip is hard to find in the midwest but occasionally it can be bought. Will try lo & slow next time.
