Leftovers (pulled pork)

Anyone have any good ideas for leftover pulled pork (besides ABT), and the obvious pulled pork sandwiches.[p]thanks!

jerseymatt,[p]Leftovers from yesterday's butt:[p]Breakfast today - "Manchaka". Finely diced pulled pork seared in the fry pan, then added diced green onions with diced tomatoes and let cook a minute then added whipped eggs with a little heavy cream. Scramble as usual then serve with fresh ground black pepper. Very tasty![p]Lunch today - BBQ sandwiches on cheap white bread again. You can never have too many BBQ sandwiches.[p]Afternoon Snack - Ritz crackers with pulled pork on top and some BBQ sauce.[p]Dinner - Pulled pork with Taco or Fajita seasoning rolled in nice warm tortillas. As a side dish I'll add a handful of finely diced pulled pork to my white rice along with some green onions while it's cooking. Rice done right![p]OctoberGlory

jerseymatt,[p]Pasole!!!!! It is basically a stew made with pork and hominy. You just saute up a bunch of garlic and onion with some chili powder, dried oregano. Add your pulled pork with some chicken stock and let simmer for awhile. Very tasty.[p]Hope this helps,[p]BB

jerseymatt,[p]One of my favorites[p][p]I got this recipe from Don & Sharon Will of Smokers Wild. It's a burrito that I make out of left over pork from contest. [p]1 tablespoon vegetable oil
1/2 cup chopped onions
1 4 oz can chopped green chilies
2 jalapeno peppers seeded & finely chopped
1 clove garlic, minced
2 1/2 pounds pork butt cut into 1" pieces (or 2 pounds cooked)
1/2 cup beef broth
1 1/2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 teaspoon salt [p]
Heat oil in Dutch oven over medium heat. Sauté' onions, green chilies, jalapenos and garlic about 2 minutes, stirring often. Add pork and broth. Sprinkle with chili powder, cumin, and salt. Reduce heat to low, cover and simmer about one hour, or until pork is tender. Shred pork with fork and mix well with pan juices.
I use already cooked pork that I have already shredded. Put on flour tortillas. Makes about 10. [p]

jerseymatt, The best one i have found is Tamales. Mix about a pound of Q with roasted tomatillios, garlic and chilpotle peppers - stuff inside some cornmeal. BEST tamales you will ever eat. A little time consuming but well worth it and a labor of love. Holler if you want the recipe.

jerseymatt, I use Rick Bayless cookbook "Mexico-One Plate at a Time" I use his recipe for the tamale batter and his directions for makeing, folding and cooking. For the filling I take about 10 tomatillos, a handfull of garlic and a jalapeno and roast them. Them blend them in the blender. Then cook for a couple of minutes in a fry pan until it darkens. Then add 1 or 2 lbs of pulled pork. Then follow Ricks recipe. Like I said this is a labor of love. Once you get the process down it gets easier. The main thing is to cook them after rolling and them let them set for 10 minutes to firm up. Clear as mud ????
