Fish is great cooked in the egg. My method is to use a cast iron skillet. I cut the handle off a large 12 inch skillet so it fits in the egg. Platesetter legs up, grid on legs, skillet on grid. Heat dome to 400 degrees. [p]I keep it simple, brush melted butter on fish, dust with salt, pepper and half-sharp paprika. In a small bowl have more melted butter to pour on skillet then place your fish in skillet and cook. Check often as you don't want to over cook cod- Cooking time- depends, Best to check with a fork. When done bottom of fish will be brown and crispy and the meat will be moist, opaque and flake appart. No need to flip the fish. [p]Clay Q
