Neil\'s Smoked spotted sea trout

The 4 nice spotted sea trout that Neil caught the other day made it on to the smoker today.
after spending the night in a zip lock bag with a salt water brine. they were rinsed and went into another bag with 3/4 of a bottle of ginger soy sauce, 2 c brown sugar, 2 T of lemon jc and 3 T of ragin river. was supposed to have a cup of honey too but it was sounding very sweet to me.
set up indirect with an ice pan and lots of sweet fruit wood chips for smoke. had scooped most of the lump out to help keep the temp down.
let them go about 5 hours.
still very sweet.. fish candy... I think the next batch I will cut the sugar to a cup and add a few flakes of red pepper. these were very good. they firmed up and the texture was much better.
would do them again with no changes. but would like a little more heat.

:woohoo: Pat, he hated keeping the little one. it was only 16 inches but swallowed the hook and he knew it would not make it :( need to get some mullet like you said to try.

The color looks wonderful. I would have loved to have tasted that, Julie.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

That is BEAUTIFUL.It looks similar to what I was served as a cold appetizer.What I had was not sweet at all but smokey and savory served with a remoulade.WOW! Schweet cook!

I am not a biologist but have been told that if a fish swallows a hook(freshwater)if you just cut the line and let it go the hook will dissolve and the fish has a really good chance of survival.I know NOTHING about saltwater.If it was a stainless steel hook that may not be the case.BTW,I had rather see ya'll eat it than a pelican or gull.

Just an outstanding job on those fishes!! A lot of work but well worth it. The color is just outstanding.

Hoss, I was just teasing Neil a 16" trout is in the slot limits (15-20 inches) and I would have ate him,,, did you ever see my monster dolphin? . Also a gut hooked trout with saltwater gear has a minimal chance of survival. I'll feed the pelicans my leftover bait but if they snag my trout we might just have to find a way to egg a pelican :laugh: :laugh:

Kim, you can just go to the bait shop, buy the shrimp and go home. That should save you about 20K on the boat and fishing tackle :laugh: :laugh:

new pole cause the others were to long to fish in a kayak?? :blink: 150.00
line for said pole 12.
toys for kayak 150-200 (that I know about )
so about 1500.....
so he has brought home about 8 fish so far.......
publix has them for 8 a lb......
cleaned!!!!
and filleted !!!! :pinch:
him out of the house having fun...... :woohoo: :P :laugh: :evil: -
