Bacon Ring Appetizers

I’ve been fooling around with an appetizer recipe I got out of “Food & Wine” that I think opens a lot of new ground for creativity. By looking at the pics below you’ll be able to understand why I think their must be something that can be made / borrowed to cook the rings on instead of the carrots – I was thinking of a cast iron cylinder thingy with some kind of clip or something to fasten the bacon to. Anybody that can think of something like that or a way to make something like that let me know.[p]This first step is what I’m referring to when I say I would like to use something besides the carrot – you may not even want carrots in the recipe and if you do you don’t need that many to just cut match sticks and stuff the ring with anyway.[p]Picture022.jpg[p]I used indirect with a firebrick for long enough to render the fat, then direct with some rub on there to crisp em up.[p]Picture023.jpg[p]Picture024.jpg[p]This is what the recipe calls for: alphalpa sprouts, carrot sticks, avocado, and mayo with hot sauce / rub mixed in to bind it together.[p]Picture026.jpg[p]After stuffing them I put em back on to re-heat and add more smoke.[p]Picture030.jpg[p]They sure are good, but I think they can be better…any ideas are welcome. I know japs will go good in there and with this set up you might could stuff whole or half ones and cook separate and stuff down in the ring, or slice em after they are cooked to be used as just one of the ingredients.[p]Picture027.jpg

    i spent a week at the beach in maine and every day dug clams. i make a stuffing of chopped steamer clams,chopped chourico sausage, pieces of skinned hot dog rolls mayo and sometimes leftover lobster salad and some old bay seasoning. make small balls and squash about the thickness of the width ao bacon and wrap and pick the bacon around the outside edge, about the size of a hockey puck put buttered ritz crakers on top and bake. serve with lemons. similar idea to yours but with a softer filling. can be made small like appetizers or large clam cakes

    Very interesting. I'm thinking of creamy garlic potato stuffing with diced onion and melted cheddar for a cap.[p]Thanks for sharing your eggsperiment.
