Mole enchilada

Had a bunch of mole sauce left over from last week so thought I would make some enchiladas.
"Buttered" the tortilla with mole sauce
Loaded up with stuffing
Added cheese
Mole sauce in the bottom of the pan and on top of the enchiladas, then more cheese and on the egg with a little mesquite.
All done
Nice enchilada

I can almost smell them.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
Frank, I don't know the first thing about enchiladas, but that looks good enough to eat!!!
You are on a roll today! Never was a big pâté fan either, but even that looked good! Though I have to say it looked better before the beast got a hold of it! :laugh:I hate it when I go to the kitchen for food and all I find are ingredients!
