I've had an 11.5lb (yes, its the biggest i've seen) pork butt on the egg for 19.5 hrs at 230ish dome temp. The therm in the piggy is reading about 170. I usually pull it a bit higher, but this one has been on FOREVER and i'm out of fuel... suggestions ?
BTW - the bark looks perfect.

Wrap it in foil and stick it a 250* oven. Pull it at 200* and you will be fine.

I have 2 on right now that have gone for 20 hours and still aren't ready. My plan is that if I run out of fuel, I'll pull them quickly and add charcoal so that they can get to 200.
I've used a lot more fuel than normal, I'm guessing since it was around 27 degrees last night. -
At this point, it should have a pretty good flavor. Finish it in the oven. Place on a rack in a pan, set the oven to 250. Consider basting a little to avoid drying out, or place a pie pan w. water on another rack.
Or, be a purist. Tuck the butt into the oven until you can refuel the Egg. Bump the dome up to 300. An 11.5 pounder could go 23 hours at a dome of 250. -
Thanks.... this is what i'm gonna do !!
