What's the best way to cook fajita chicken? I already have it marinating just need to know temp and time to cook. Also should i sear it on the cast iron grate or cook on regular grate.

If I'm cooking boneless breasts I sear on the grate a few minutes each side. Pull them off and slice. Then put them in a ci skillet on the egg along with some marinade and the peppers and onions and sautee' for a few more minutes.

I'd definitely go with cast iron if you have it.
I almost always use my cast iron, regardless if the dish needs it or not. My thoughts are:
-It doesn't hurt to use it if it isn't necessary for searing
-Frequent use keeps it well seasoned
-The greater mass seems to make for more even cooking
