Calibrate Thermometer

How do I calibrate my dome thermometer... I know about the boiling water but how do I actually adjust the thermometer... there is no set screw anywhere on my thermometer only the nut at the end of the probe that extends into the dome... I was going to try to turn this but didn't want to run the risk of snapping the probe.
