The "Go Falcons!" Brisket Experiment and "Dang I Need a Large Egg!"

<p />To celebrate the playoffs and the fact that the Falcons get another shot at the Superbowl, I'm doing my second Guru allnighter on a 12 lb brisket. Well, that is, it was a 12 lb brisket until I had to cut about 5" off the end to make it fit on my Medium! I hated doing that, but I had no choice. Oh well.[p]The experiment is that I decided to inject this brisket in addition to the usual rub of Dizzy Cow Lick and turbinado sugar that I've done in the past. I threw together a concoction of Dr. Pepper, yellow mustard, Dizzy Cow Lick, and something else that I can't remember right now (hey, by the way, adding Dizzy Cow Lick to Dr. Pepper makes a cool reaction kind of like Coke and Pop Rocks), and injected this liquid into the brisket until my dang injector clogged up. [p]NOTE: Here's something I learned the hard way: When injecting a brisket, it is not uncommon for a fine stream of your marinade to eject itself from another seemingly unconnected part of the brisket and hit you in the eye. Pretty strange.[p]So, anyway, the truncated brisket went on the Egg about 7:15 tonight and the Guru is holding a 225 temp just above the brisket (I changed my probe location for this cook). Assuming I cut off about 2 pounds of meat, I'm guessing this thing will be done between noon and 3:00 tomorrow. Maybe a little late to eat while watching the game, but we'll see.[p]Cheers to all and Go Falcons![p]TRex
