Seeking opinions

I was given a $35 gift certificate to a local butcher who farms most of their product himself. My wife may as well be a vegetarian and my two year old doesn't eat much meat beyond hot dogs and chicken nuggets. In the five months I have had my egg I have cooked pork ribs, boston butts, pizzas, salmon, ham, turkey, meatloaf, beef roast, and beer can chicken. How should I spend this gc? So far I have been leaning toward brisket or dino bones (two of my favorites). What should I expect to pay for a good brisket?

    I would buy me 1 real nice steak. Stop by the Golden Arches on the way home and pick up a salad and some nuggets for your wife and the kid. B)

  • Saw on TV where y'all were hiding in the air late yesterday. Thick fog. I'm sure its gone now. If not, maybe it will just freeze and fall to the ground.

    Gotta drip the faucets tonight for sure.

  • That doesn't sound bad at all. I had been leaning toward the brisket because I thought I could split it between some nice sandwiches and maybe a pot of chili.

    I'd get a sweet steak or prime rib or something. Tough life to have to make a choice like that. Sorry about the wife.....or not. I guess it's much cheaper right? More meat for you!! Enjoy the cook, however you lean.
  • Spring Chicken, not sure if you were talking to me or Photo Egg but if you were talking to me I think we are safe. I am in the southern tip of Indiana by Louisville. The bad weather is supposed to stay both North and South of us.

    I am from Texas and going to get shot for this: I would do the dino bones. We are talking beef-correct.
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. 

  • Andrew, I'm lucky in that she is willing to eat things which contain meat, she just typically sets it out to the side (for me of course). It does get difficult at times because I plan and cook all of our meals. We don't always see eye to eye on my plans.

    Most of the briskets I've seen at the markets are around $4/lb. The organic place I go to has it for about $7/lb, and so $35 would only get a portion.

    I would be tempted to use the $35 to pay for a first time, so if the cook didn't work out so well, it would be no loss.

    However, I've made some awfully good dino bones. They were good enough that my wife liked them as well as steak, so maybe they would tempt your wife.
  • We are absolutely talking about beef. Brisket and beef ribs are my automatic choice for good BBQ. I've just never cooked the beef ribs and the one shot I had at a brisket was just short of disastrous in my former water smoker.

    Fog rolled in hard yesterday morning but I was already at work watching it roll over Rice Univ from my window.
    Don't make much money working for the State but I do have a window view. We have Weekenders next door and he called me on my way home from work last night and asked me to shut off his water and drain the house. Glad to help and it saves him a drive.

  • Sorry about that. Darian lives in Galveston so when I saw the news that heavy fog was rolling in I instantly thought of him. When he posted just now I thought I would take advantage of the opportunity to say something.

    Sounds like you are on top of things too.

    Wind is gusting to 35 here but it's clear for now. Possible snow in the forecast though.

    Spend it on paperwork to find a meat eating wife? Just saying....

    Get the brisket, it'll freeze well too if you pull some off for later! OR buy a small prime rib and slice off a couple thick ones for yourself to freeze.

    Beef Back ribs are one of my favorite things to cook. They take 4-5 hours at 250 grid temp indirect. Don't get short ribs unless you want to cook them in liquid - they are part of the chuck portion and are tougher than back ribs. Short ribs are OK, but in my opinion they aren't even close to back ribs for flavor and fun to eat.

    Indulge yourself on something you might not otherwise buy. Lobster, duck, prime rib, filet. Treat yourself. This is a gift. Splurge and enjoy it.
  • I may have to go for the ribs. I just called the butcher and they are out of brisket until sometime next week. I was looking for something to have on Sunday.
