I'm cooking in a neighborhood Chili Cookoff/Watch football on the big screen in the driveway/Drink beer all day on Sunday.[p]I just checked and my Lodge Dutch Oven fits in my small egg. I want to take my small over and do darn good chili in it.[p]Any folks got any recipies for some awsome smoke infused chili?[p]I'm sure I'll get lots of questions, especially if my chili wins, but it should get some attention for the Texas Eggfest.[p]I'll post pictures after Sunday.[p]Thanks in advance![p]GrillMeister

hey ed, do you want tomatoe based chili? . . .or maybe just a beef and beer based chili?. . .do you want beans (aren't they taboo down in texas? . . .
-
mad max beyond eggdome,[p]Beans are OK for this cook off and I like em too, so I'm looking at beans and tomatoe based for this one.

GrillMeister,
i don't know if this will win you any awards or not, but to get an 'edge'. . .grill all your meat on the egg first. ..try the 'tails' from whole tenderloins, along with whatever sausage you like. ..coated well with dizzy cowlick and chili powder. ..also grill some jalapenos, sweet peppers, and onions on the egg. . .take the meat and grilled vegies, cut up small, put in your pot along with canned crushed tomotaoes and one can of tomatoe paste. ...add plenty more chili powder and other powdered spices/pepper to taste. .. .then cook it uncovered in your egg at 350 degrees for 3 or 4 hours, with a chunk of hickory or other wood.. . the tomatoe sauce will absorb some smoke. . . .add beans the last hour or so. . .[p]again, don't know that this will get you any awards, i know i've seen plenty more sophisticated recipes around here, but it sure does taste good. ...

mad max beyond eggdome,[p]Sounds like a good start to me. Thanks! I'll let you know how it turns out.

GrillMeister,
I have a mean southwestern chicken chili that has beaten everything it has ever gone up against! If you want to rattle some cages and take first with something slightly different, let me know and I will send you the recipe.
-
ShortRib,[p]Sounds good to me. Bring it on![p]Thanks!

fiver29,
I agree with you about Kenny G's Chili. I've tried a lot of different one's that have been posted, and I am no expert on Chili, I yield to those with better taste buds than mine, but his is the best I have tasted so far.
Just my opion!

mad max beyond eggdome,
Atlanta? That was when I first tasted it, two(2) years ago. It was great then, and is good everytime I cook it.

GrillMeister,[p]Here it is, as written by my girlfriend: a few quick notes, first, I have never done it in a dutch oven before, others have and said it was awesome (as a matter of fact, they won a contest cooking it in the egg), second the chicken goes in raw, but some have done a qick smoke of the chicken before adding it to the crockpot.[p]Here it goes:
In a crockpot, place and stir:[p]2-3 lbs boneless, skinless chicken breasts (can buy frozen-will be cheaper)
2 cans of black beans (include the juice too)
2 cans of diced tomatoes (Mexican style if possible, with or with out the green chiles)
1 can yellow corn (do not include the juice)
1 green pepper chopped
1 small/med white or yellow onion
* secret ingrediant: 1 pack of taco seasoning (El Paso, preferably)
Crushed red pepper to taste- per Nate, "don't be bashful"
Texas Pete hot sauce- use about 1/3 of a 6 oz jar (approx. 5 "glubs" when you shake the bottle! that is Nate's technical term)
Garlic Powder approx 1-2T
Chili seasoning- approx 2-3T
Cumin approx 1-2 T(if you have it)
fresh Cilantro- use a bundle (its sold that way) and chop up the leaves (throw out the stems)
Jalapeno peppers- chopped/slivered (optional)[p]Use your judgement with the seasonings. Nate doesn't measure anything! Cook for atleast 8 hours in crock pot. Once cooked, the chickend will obviously be very hot, but you need to pull it apart or shred it. This will happen with a few intense stirs.[p]Serve it with sour cream and shredded sharp chedder on top. Can also put tortilla chips on the side to dress up the presentation. Trust me this Chili is awesome!!!!!!!!!!
Good luck![p]Well there it is. Let me know if you use it and if you win.
