While this is a new picture taken last night I have posted a similar one in the past.

For a fancy meal it's hard to beat these potato balls made with the small end of a melon baller. As for the rest of the meal it was hot tubed fillets and Bearnaise sauce. Simply delicious and my wife's favorite of all favorite meals.

Peel 4 large red potatoes and then using the small end of the baller push in deep and then turn and pull the ball out. It takes a little practice which I have gotten over the years. Then as for cooking them the key is to keep them rolling in hot oil over medium heat. I use 50-50 veggie oil and EVOO.Re-gasketing the USA one yard at a time!

I just use common red potatoes. Typically I can get 6 nearly perfect spheres from each potato. BTW there is no waste because I then shred the hollowed out pieces, then boil the shreds to get much of the starch out and then freeze for hash browns.Re-gasketing the USA one yard at a time!

pssst, Steven for me things are one step at a time - here I am perfecting the making of my spheres so I cheat and use Knorr brand package sauce - but lots of real butter and half and half to clog the arteries anyway! :laugh:Re-gasketing the USA one yard at a time!

Ron,
The Hollandaise and it's derivatives are really easy. You can do hollandaise by pouring hot butter into a blender with egg yolks and lemon juice. All you have to do for Bernaise is sweat some shallots and tarragon and reduce with vinegar and wine and pour it in the blender.
