Pizza Question for TJV

Tom I noticed you cook Pappa Murphy's large thin crust pizza crust direct and high on the adj rig.
Do you leave on the cardboard bottom the whole cook?
Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    Sorry about direct. It is on a pizza stone on the adj rig in the picture. Not paper direct to fire.

    That said, I still think the cardboard is just there to protect the pizza during shipment/storage. I don;t think it is intended to be used during the cook, be it in an oven or on a stone. But I could be wrong, I was once before.

    not direct, I do them on a CGS 16 inch stone atop the rig with rig extender, It puts the stone 7.5 inches or so above the fire ring. The 16 inch diameter stone matches well with the pappa murphy thin crust ZAs. I cook using the paper plate under the ZA. Temp just over 400. Make sure the burning lump is evenly distributed in the firebox, provides even heat as heated air rises off lump. Also, make sure your bge thermometer is not in the way. See pic for better detail. t

    Mickey, we egged Papa Murphys pizzas for a demo cook yesterday and left the cardboard ON. Platesetter legs up, grid then the pizza. The trick is to cook it at a lower temp. 350-ish. They came out great. They gobbled them up.
    My dealer Alec is a genius.
