Rib Eye Recipe

how thick should I have my Rib eye steaks cut and any help on how to cook BGE style would be greatly appreciated.

    Many on this board use the "T Rex" (aka...the "esteemed" Jason Faulkner) method when cooking steaks. It is a great way to produce excellent results!! The Naked Whiz's Website has a tutorial on the above method.[p]RibeyeBalsamico.jpg[p]

    great pictures, I'm hungry already. I can handle my steak a little rare, but the bride in my life will see it different.Can you take a Rib Eye to med well? I'm not talkin hockey puck, just a little more past the mooing stage.

    I agree with Chubby, that a good Ribeye should be 1.5-2" thick. I have done a lot of them, with great results. First get them to room temp, apply a rub of your choice. French's Yellow Mustard works real well. Get the egg to about 750-800F, then for med rare, the following time table seems to work,steak on grill, lid closed. all vents open. Four minutes on each side, then close vents, four more minutes. Remove carefully, let set for about 10 minutes, then serve.

    If your bride likes it cooked a little longer- give her what she wants. Then everybody is happy. Ribeye is rich in fat so medium well wont kill it but it will be dryer and not as tender as your med. rare. Still, a little butter brushed on a couple of times will help keep the meat more moist. Some garlic pepper mixed in the melted butter is a nice touch. She will thank you later on....................[p]Clay Q

    thank you for the advice.[p]I'm adicted to reading the forum every day but rarely chime in. Great bunch of folks is all I can say. It's obvious that many have been friends for a while. Although some complain of the O.T. remarks, I find myself LOL all the time.
