will do. I am thinking about 18- 20 hrs for the pork and the beef I will pull in about 12. This is my first attempt with this set up...I have the main grate in origial position. THen I have the pizza stone with empty drip pan with the grill exteder over top. Dome temp is about 250...any feedback? I need to get the platesetter from Ed (fathers day)

Looks great! You might want to watch the bottoms of the roasts that are extending beyond the drip pan....they'll burn real crispy...this is the voice of experience speaking:)[p]Looks like a tasty weekend at your place. Good luck.[p]Mike

FWIW, with your upright setup you might want to switch ends vertically midway through the cook.

jerseymatt, looks good, but if your pan is square, you might consider a longer rectangle on that would allow you to line up the meat over it so that they are not laying outside the area of the drip pan.

the beef will be no problem, but the pork, the end in the air would not balance on the grate. should I move on its side?

I think I probably would. The only reason I mention is the top of the butt is sitting up pretty high and there is about a 25 degree differential in the dome temp and the grid temp. It would probably make for a little more even cook if it was switched, but I am sure it will be great either way. Everything looks great!!!

They were good Rskin teams back in the day. The hogs were nasty. And Gibbs, masterful! It's just hard to watch what they have been putting on the field lately. When is the last time they beat the eagles? at least 8 tries ago. [p]For what it's worth, I always pulled for those NFC east teams whenever they got to the dance. All except the cowboys that is.
