Elder Ward's Brisket, kindq

We are doing Elder Ward's brisket today. Actually the meat is done and sitting in a cooler and the beans are on the egg.[p]We did a small 3# brisket. It took about 5 hours at 275*. The beans are now on and should be done by 7 pm. We are doing this all on a smoll BGE. While we have followed Elder's recipe to the letter before, today we are just using his temps and timing. We are using a rub from SMOKE AND SPICE we already had made and we are also cheating on Tanker TTim's beans. We had no bacon and we are not using cast isronin the egg, our cast iron is too big for the small BGE. This will be a good meal, just not an exact copy of EW's. We are using what we have on hand while we tend to other priorities on Memorial Day.[p]Hope all are having a good day with family and food.[p]God bless.[p]Fritz
