Poultry Shears

I would like to buy a new pair of poultry shears because I constantly keep breaking the previous ones I have owned but I wanted to know if anyone had any opinions on the various brands out there. They don't have to be cheap, I'm willing to pay for the quality. What do you guys think?

Cooks Illistrated rated Messermeister number 1 and I am real happy with them.
Got them from AmazonSalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
That the 10" ones for $36? You recall what issue CI covered them? I'm a real sucker following their recommendations on kitchen tools in spite of them being so clueless about the BGE.

A few weeks ago someone posted about some really good shears from Home Depot, $6 or $7 as I recall, and super for poultry

Thanks for all the input. So far I'm leaning towards the messermeister shears. Do the 10" shears have the notch for bone cutting like the 9" italian shears do?

I used to have poultry shears but found that my chefs knife would do anything they could do, and faster. I also like a chinese style cleaver for those tasks. Shears were harder to clean too.

Have you tried disjointing a chicken with a heavy French Chef knife? Not a flimsy one, not a boning knife, but heavy. You can push it thru the breast bone and back bone as well as cut thru the joints. Learn the anatomy of how the joints are attached. A chicken can be cut into eight pieces in about a minute. Really. Get a good knife with a good edge and give it a try.

jenericzac: I have used a pair of these for years, and they have been bullet-proof, and still unbelievably sharp, even with industry work. Messermeister comes very highly recommended from this camp.

Treat like a good knife though, wash and dry by hand.Dishwashers are good blades #1 enemy. I am sure the 8 1/2 inch are the same blade quality. Either or, you won't be sorry.

I have a pair from chicago cutlery that I am very pleased with.
They separate for easy cleaning also. -
Here's what I think...nothing beats my Chef's Choice shears, cuts like buttah. I don't know what they cost because I've had them so long, but they didn't break the bank
Comes apart, and locks closed. Really sharp. I keep them in the original red box so I can always find them.

I suggest Cutco sheers. They separate and are dishwasher safe.

I have to admit, being able to spatchcock a yardbird with a knife or cleaver is, from a K.I.S.S. standpoint, the "way to go", but those Chef's Choice shears sure do look, VERY well designed.

I tried many different methods except a knife (I am too clumsy).
Check out my post about the gems I found at Home Depot. I think they were like $5, work great!

Thanks again for all the suggestions, I'll give the knife a try when I get a chance. If it doesn't work out then I'll pick up one of the recommended pairs of shears.
