I have only used the KA grinder with a coarse die and double ground the meat. These are way bigger than the KA dies.It came with 3 Coarse medium and fine.Any tips appreciated.

Save the fine for LONEY. I have a KA 600 Pro and have yet to use the grinder.
My neighbor just placed 125# venison from 3 doe and 1 buck that he processed today. Handed me 7#'s ground and said next week chili. Any ideas for venison chili?

the kitchen aid coarse is too small to double grind, the fine kitchen aid is worthless unless maybe making loney? those coarser blades are better for things like chourico, chorizzo etc and i like things like chili with a real coarse grind, should work fine

I hate it when I go to the kitchen for food and all I find are ingredients!

    Well,

You may not want to know this but you start with feet, bladders, pancreases, kidneys, brains, whatever they scrape off the head and all kinds of other stuff that they can't legally put in dog food. They cook it in real hot kettles and put binders and a bunch of chemicals to prevent any bad reactions. Then they extrude it in to plastic casings and let it solidify. It is soooo good!

sounds good, might even smell good  i used to do some work in a jello plant, believe me, it dont look or smell so good, stuff would be oozing green, dripping out of the dump trucks, probably coming from the loney plant  dumped on the hot pavement for days, then wallah, green red and yellow jello :woohoo:

We used to do palletizers, depalletizers, bottleing lines and conveying systems for the food industry. I stopped eating everything that I saw made. I won't eat chocolate cause I worked at a plant one summer. Canned soup..no. canned ham, spam, cocktail sausage..no. Funny thing though, I worked at all the breweries...yesss!

    Man,

I worked in dog food/rendering for most of my apprenticeship. They would send us from there into an office building and the looks we got were nasty. Did hides and skins too  The kill floors at packing companies for both cattle and hog. The poultry packers were the worst in midsummer. I used to strip on the back deck year round cause the smells never came out of the work clothes ;)

I was working at the packing company many years ago doing the automation on a packaging line. We needed to put sensors on the real old rotary canners. The sh!t was spraying us all day long and I had an apprentice that was bichin his brains out about the goo. After work one day I stopped at the rendering company I used to work at to say hi to the boys. He puked his guts out and on the ride back to the shop I told him in a gentle sort of way that I wasn't terribly interested in listening to his whining B)
