Just so it sits there and simmers Joe. I did mine with and without the DO lid. I need to see how my large DO fits my spider and whether I want to use it. I may need to use my adjustable rig if the large DO won't fit the spider.
I probably cooked mine 3-4 hours or so. I wanted the meat to fall of the ham bone which it did. And so I felt I was actually doing something.
Mine will go on Saturday.
