Peri Peri Chicken breasts

The Pepper Pilot was gracious enough to send me some samples of his rub to try.I must say if the Java Lava and Rattlesteak come anywhere close to the Peri Peri,he is on to something.Momeo even said"this chicken is perfect".That's a first. :blink: I marinated 2 split chicken breasts in Cavenders,Louisiana seasoning and Kikomans teriyaki for a coupla hours.I then coated with a liberal amount of Pepper Pilot Peri Peri.Cooked indirect,450-500 dome til it hit 160 according to the thermapen.Let it rest while Momeo made a little instant rice.
Served her supper.It was a hit.Thanks Pepper pilot.

I LOVE my retro dishes.Some were my Mom's some were her Mom's.I check Goodwill every week for more to add to the collection.Happy Memories!

There is African Peri peri and Portuguese peri peri. The Portuguese isn't quite as hot. I'll send you a jar. BTW I am out of La Hossa and that delicious pepper jelly. Have Bomba will travel

Hoss last time I ate peri peri I was in a little beach town just east of Capetown. The place we went to was known for its peri peri seafood skewers. They were awesome, almost 2' long loaded with seafood dripping with grilled lemon and covered with peri peri. I am going to have to check out this pepper pilot thing!

That look quite good Hoss. I have used the Peri Peri before and really like it. We liked it so well that I have planted a couple dozen seeds that I got from them. they are up and going now, about 2-3 inches, getting their second leaves.

It was good Dean.I prefer dark meat but these were bonein split chicken breasts.I cooked @ 450-500 indirect and pulled em off @ 160-165 IT.They were flavorful and very moist/juicey.Thanks.

looks and sounds good to me. is the rub hot enough to add to oil and vinegar to make piri piri saucefukahwee maineyou can lead a fish to water but you can not make him drink it

I think so.It is pretty spicey but not overpowering.Has nice lemon zing to it also.

Thank you for the review on our newest rub. I am glad to hear that everyone liked the Peri Peri and it was not too hot for them. We tried to make sure it would fit for everyone.
I think the best use for it is on chicken just way you did it with a nice looking finish. I have even spiced it up a little more by adding vinegar and olive oil to create a nice paste for seafood and chicken.

I have mixed it a few times with vinegar to use as a overnight marinate/brine for wings and it come out fantastic.
I do like the idea of using it as a sauce, I will let you know how it works out. It definitely has the heat you ned to make it a true Peri Peri sauce.
