Slow Cooked Chicken

Unknown
edited November -0001 in EggHead Forum
I've cooked a few chickens (whole) lately and had outstanding results. My method was about 260-270 degrees all day. The last one yesterday took 8 1/2 hrs. It was the most amazing chicken I ever cooked. My question is can I turn up the heat to around 325 and have the same result? I'd like to have a little more normal cook time.

    Adam,
Use the same temps you would use in your oven. Good rule of thumb for just about anything.
I seem to recall I do our roasting chickens at 375º until the breast meat is 170º leg/thigh 180º. Skin somes out crispy and the meat is moist and easily pulled away from the bones.
I've never tried slow cooked chicken just might give it a try though.

Adam,[p]If you haven't tried a spatchcocked chicken yet, you need to. It is very fast, very easy, and VERY GOOD! Here is a link to The Naked Whiz's Spatchcocking recipe page.
