Well, the results were disappointing, but there is hope for a better result next time. I think the theory was good, but the execution was lacking. To recount what this was about, I took two 2-inch thick chuck slabs and tied them together to make a bigger piece of meat, thinking this would result in a longer slower cook. Well, I got that part right. Not knowing what was going to happen, I just tossed the meat on at 8 am and hoped it would be done by 7 pm. However, it hit a plateau and wasn't gonna budge. I ended up raising the temperature a couple of times to force it out of the plateau and the results were predictable. I couldn't pull the meat, I had to manhandle it. I think if I did this as an overnight cook, it might turn out a whole lot better.[p]So, Scooby the Wonder Dog will get a nice big hunk of meat today, and the rest of it is going into CHILI today, (You hear that Lawnranger?? LOL!)[p]TNW
