Typically I like to do the CWM method for ribs, and use baby backs. I had a 6lb spare that we got on sale, so I used them instead. I was way short on time, so I tried a new method (for me). I set the Egg up at 280 degrees (although it eventually went to 300), using Hickory and Apple for my smoke. Rubbed the ribs with yellow mustard and some Cowtown Sweet Spot (out of Dizzy Dust). I cooked for two hrs at 280-300, then foiled with 1/2 a can of soda for one more hour. After 3 total hrs, I unfoiled and the ribs were falling out when I lifted them. I glazed with Blues Hog for 15 minutes and pulled them. Total cook time was just under 3 hrs and 15 minutes. Ribs were fantastic. I typically make mine a little less done, but these were really, really good.

Oh, they are beauties! I'm going to try that next time I make them. I like 'em both ways, falling off the bone, or with a little pull. Just so they're BBQ ribs! :P
Keep those pictures coming. I save lots of calories living vicariously.
