I have done a couple of all night pork shoulders that came out fine.
What is the difference between the shoulder and the por butt?

jake42,
A shoulder consists of the butt and the picnic. The butt is the butt end and the picnic is the shank or leg end. So a butt is half of a whole shoulder.

The Naked Whiz,
Thanks.
So does this mean that there is actually no real difference in quality and cooking results?

jake42,[p]The picnic part of the shoulder is a little leaner than the butt and the texture of the meat will be a little different, not too much though. Also, a picnic and a large part of a whole shoulder will have the skin on it. It helps keep it moist, but it also prevents rubs from getting into the meat. A picnic or whole shoulder still makes great bbq.

jake42,
Here's a link to our recipe page where i cooked a whole shoulder, but had it cut into the component parts, the butt and the picnic. It'll show you the yield and the finished product from both parts.
I personally, and I think a majority of folks, feel that the butt gives a slightly better end product, but if you were to cook a whole shoulder (butt and picnic) the results when mixed are mighty fine.
