WessB,[p]What kind of crust you got going on there? I have been doing cowboy grillers for years. Is the bacon and cheddar wrapped inside the breast then a different crust? I've been stuffing the breast with goodies and wraping in bacon.

hey wess. .great pictoral! . . and they look and sound delicious. . .one question, you say you flipped every ten to 15 minutes. . .how long was the total cook? . . .at 400 degrees direct i can't imagine they took too long, but i would like to know how long you kept them on. . ..

Damn..did I leave that out of the description..LOL..these took 1 hour to reach 155°-160° internal, I think the chicken was still pretty cold when they went on the egg....Thanks for pointing that out, I will definately have to edit my page..[p]Wess

thanks wess. .. .we'll have to give these a try. .. brett did something similar on new years day, only he stuffed his with some mushroom stuff. . .. [p]i've heard other recipes that call for a coating of corn flakes. . .i've never tried it, but i obviously need to. .. [p]btw, i'm already thinking about breakfast in waldorf!! (giant, hurts my face grinning thing)

We are definately doing breakfast again at Waldorf....kinda becoming a tradition...As far as the corn flakes, thats something I got from my grandmother many many years ago, been using it for a long time but almost always for frying. I usually use some kind of bread crumbs when egging.....try the egg wash/corn flake coating on some pork chops and fry em up in a pan like grama used to do with chicken...hands down my favorite way to cook a chop...[p]Wess

thinking about your post all day yesterday and decided early on that the wife, son, and myself were due a lower fat dinner and chicken was it. Wanting to follow your lead and do em a bit different than I had in the past here's what I did. I took one of those tiniest itty biddy jelly jars that is much taller than it is big around and poured a couple tbs of chili oil (had seseme oil in it), 2 tbs dales sauce, and maybe 1/4 cup apple juice and the little glass was full. Took my injection needle and filled it up and injected 3 breast that had already been oiled and dusted heavily with Ts. Spin just moments before putting them on the mini at 350. Took about 20 min and turned them every five. Will do often. The mini had room to spare and those suckers were as big as breast usually get. Thanks, WessB
