Cornbread Stuffed Pork Chops

We happened to be next door to Hebert's Specialty Meats near The Woodlands a few days ago and decided to check them out. Got a container of crawfish etouffee and some cornbread stuffed pork chops to try.
Had the etouffee yesterday. Really good.
Had the pork chops tonight.
I fired up Lily Large and followed the instructions for cooking them.

They were as good as they look (even better) and I just may have to do them again. We paid $3.50 a pound for two (about 2.7 pounds) for them but their web site lists them at $12.95 for a 2-pack.
The crawfish etouffee was about $15 for about four servings. We made our own rice for it.

Leroy, that new grate is looking good. Seems to have lost some of its shine. How do you like it? Herbert’s is a great Cajun market and I think have the best Turducken in this part of the country.

Why not direct?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -

Yes, the shine is slowly going away. But that's okay, it's not greasy yet. Too cold. Gotta get me a $4.00 steak to try on it.
Hebert's only had two other customers when we walked in and within ten minutes we were bumping into people buying huge amounts of their stuff. And the funny thing was that most of the people looked like they knew how to cook Cajun food on their own.
Might try a Turducken one of these days. But I've got to get this vision of a naked chicken chasing a naked duck chasing a naked turkey out of my head LOL...

'cause the instructions said to put in a pan with 1/4" of water and then into an oven. I just used Lily Large instead of the oven, mostly because I believe in magic.

Right on. Good and juicy. Judy said I can't gnaw on it in a high-dollar restaurant like I did at the table. I'm thinking if it's good, I will, especially if I paid for it.

I doubt that I could dulplicate it. I'm told that Cajun's have the magic touch when it comes to recipes. They don't follow printed instructions. They just do what they think will taste good. Seems to work for them but not for me.

Thanks... Yes, they were over a pound each. About a pound and a half. Some of that was bone and cornbread, of course. The only thing left was the bone and I gave that a shot.
