    Al: (not trying to step on Beli's toes, but...) Do you have an ice cream machine?? We make both black sapote and Mamey ice creams. Just a thought.
    I am sure you could make a nice Mole with it as well. :)

    :laugh: :laugh: Holy Smokes Al, where did you get them...this is some of the most exotic fruits from the south REALLY HIGH IN ANTIOXIDANTS CONTENT.This is what I'd do:

    DULCE DE ZAPOTE NEGRO

    Ingredients:

    * 5 ZAPOTES
    3 ORANGES (JUICE)
    * 1 CUP RUM
    * 1 SPLASH OF VANILLA
    * SUGAR TO YOUR TASTE

    GET THE PULP FROM THE ZAPOTES & MIX ALL INGREDIENTS IN A BOWL ADD THE ORANGE JUICE UNTIL YOU REACH THE CONSISTENCY YOU LIKE

    You could also bake a cake:

    PASTEL DE ZAPOTE NEGRO

    Ingredients for 4 people

    - 300 grams zapote negro, in pure
    - 30 grams brown sugar
    - 40 ccs orange zest
    - 1 tsp de lemmon zest
    - 1/2 rape banana smached
    - 170 grams granulated sugar
    - 180 grams flour
    - 1 pinch of salt
    - 1 tsp bicarbonate
    - 1 tsp ground cinnamon
    - 2 eggs beaten
    - 70 grams raisins
    - 40 grams lightly roasted pumpkin seeds clean
    - 1 tsp oil

    Instructions

    Mix the zapote pure with the brown sugar & the zests, add the banana & the granulated sugar.
    In another bowl mix the flour, salt, bicarbonate & cinnamon.
    Add to the zapote mix
    Slowly incorporate the eggs,oil, the pumpkin seeds & the raisins
    Put all in a baking dish lined with waxed paper

    Bake on the Egg at 380* F for about 1 hr. until cake is firm & spongy to tact.....LET COOL & ENJOY

    HOPE THIS HELPS

    Not stepping at all. No ice cream machine for me. I think Faith might have one.

    DULCE DE ZAPOTE NEGRO it will be. That seems easy enough and I have oranges in the yard. I got two places, but one main one that sends it out. They are in south miami or homestead. They also sent eggfruit, but I didn't like it by itself. It tasted just like sweet potato. I'm sure it would be good making a pie. I have a black Sapote tree now. I will be attempting to container grow it. I have a bunch of tropical fruits.

    Steve it's supposed to be eaten at room temp....which in your case might be frozen :laugh: but with us just cold...something like a chocolate pudding
